Prune Pudding

Ingredients:

1 cup of flour.
3 teaspoons of baking powder.
¾ teaspoon of salt.
½ teaspoon of cinnamon.
¼ teaspoon of cloves.
1 cup of thick prune pulp.
1 cup of dry breadcrumbs.
1 cup of ground suet.
1 cup of sugar.
1 cup of milk.
3 medium eggs, well beaten.

Directions:

Sift the flour; measure; then and sift with the baking powder, salt, cinnamon and cloves.

Make the prune pulp by rubbing cooked prunes through a sieve.

Combine the prune pulp, breadcrumbs, suet, sugar, milk and eggs.

Add dry the ingredients and mix thoroughly.

Pour into well oiled 1 pound cans.

Cover, then steam for 2 hours.

Serve hot with caramel sauce.

Orange Custard Pudding

Ingredients

½ cup of sugar.
¼ cup of cornstarch.
Pinch of salt.
1 ½ cups of orange juice.
3 medium egg yolks, beaten.
1 cup of plain yoghurt.
2 tablespoons of margarine.
2 teaspoons of orange peel, finely shredded.
2 cups of fresh orange segments.

Directions:

Combine the sugar, cornstarch and salt; then stir in the orange juice.

Cook and stir until bubbly.

Gradually stir 1 cup of the mixture into the yolks.

Return to the pan and cook for a further 2 minutes.

Remove from heat and stir in the yoghurt, margarine and shredded orange peel.

Cover and chill.
Stir in the orange segments before serving.

Mango Pudding

 Ingredients:

2 envelope of gelatin, unflavored.
1 ¼ cups of water.
1 cup of sugar.
1 ½ cup of sliced mango.
1 ½ cup of milk.
1 ¼ cup of vanilla ice cream.
¼ teaspoon of vanilla.

1 mango, sliced, to garnish.







Directions:

Soften the gelatin in ½ cup of cold water.

Bring the remaining ¾ cup of water to boil in a small saucepan.

Add the gelatin, then the sugar and stir until dissolved.

Set aside and allow to cool.

Turn the cooled mixture into blender container. Add the sliced mango and purée.

Add the milk, ice cream and vanilla.

Blend for 2 minutes, stopping and starting at 30 second intervals.

Turn into a 2-quart bowl.

Cover and chill for 6 hours or overnight.

To serve, spoon the pudding into dessert bowls or glasses.

Garnish with mango slices.

Chocolate Marshmallow Pudding

Ingredients:

5 ½ oz of canned chocolate syrup.
3 cups of milk.
¼ cup of sugar.
Dash of salt.
3 tablespoons of all-purpose flour.
1 medium egg, well beaten.
1 teaspoon of vanilla.
Marshmallows.

Directions:

Add the chocolate syrup to the milk and scald.

Mix together the sugar, salt, flour and beaten egg, with a little water to thin if necessary.

Pour about half of the scalded milk over the egg mixture, then return to pan and cook until the mixture just begins to boil.

Remove from the heat and add the vanilla.

Pour into a 1 ½ quart baking dish, then top with marshmallows and brown in a 400°F (205°C) oven.

Chill.

Serve.

Baked Pineapple Pudding

Ingredients:

5 slices of bread.
¾ cup of butter.

2 medium eggs.
1 large can of crushed pineapple.
½ cup of sugar.
2 tablespoons of flour.
Pinch of salt.

Directions:

Cut the slices of bread into cubes, then fry in the butter until crisp.

Mix together all of the ingredients and put in a greased casserole dish.

Bake at 350°F (175°C) for 30 minutes.

Baked Peach Pudding

Ingredients:

3 cups of fresh peaches, thinly sliced.
2 cups of milk.
2 cups of breadcrumbs.
1 cup of dark brown sugar.
¼ cup of unsalted butter.
2 medium eggs, beaten.
¼ teaspoon of cinnamon.
Pinch of salt.
Ice cream.

Directions:

Preheat your oven to 350°F (175°C).

Scald the milk, then stir the hot milk into the breadcrumbs.

Add the butter and mix thoroughly

Add the salt, sugar, eggs and cinnamon; then stir into the breadcrumb mixture.

Fold in the sliced peaches.

Butter a casserole dish, then pour in the mixture and bake for 55-60 minutes.

Serve with ice cream

chocolate pudding cake

Ingredients:

1 cup of self raising flour.
2 teaspoons of cocoa.
¼ cup of butter.
½ cup of caster sugar.
1 medium egg, beaten.
½ cup of milk.

½ cup of brown sugar.
1 tablespoon of cocoa.
1 ¼ cup of boiling water.

Whipped cream, to serve with.

Directions:

Sift the flour and the 2 teaspoons of cocoa.

Cream the butter and sugar.

Add the egg and mix thoroughly.

Alternately, sift in the flour and milk.

Pour into greased pie dish.

For the sauce, begin by combining the brown sugar and cocoa.

Sprinkle on top of the mixture in the pie dish.

Pour the boiling water gently over top.

Bake at 375°F (190°C) for 45 minutes.

Serve with whipped cream.
